The cherries were placed whole in plastic bioreactors plastic bioreactors for 72 h. They spend the three days in contact with M02 Saccharomyces Bayanus bacteria, very popular with cider producers. The cherries were then dried on raised beds, until they reached a humidity level of 11.6%.
